When one door closes, another one opens. Anthony's Prime Steak & Seafood Restaurant will make its official debut this Friday, in place of Terzetto, and just in time for Father's Day (hint, hint). The kitchen will be churning out prime wet-aged steaks, king crab legs and many more of our President Anthony A. Marnell III's personal favorites. Our personal favorite is the Peanut Butter Pie, so be sure to save some room for dessert.

The restaurant's elegant, yet casual, dining space will offer the perfect atmosphere to wine and dine Dad, or anyone else worthy of a mouth-watering meal. In fact, here's a little fun fact if your dad is a baseball fan: the restaurant's design was inspired by Anthony's own worn baseball. You'll see touches of warm gold and beige along with masculine elements of mahogany wood and marble throughout the restaurant.

The extensive menu even includes selections from the Marnell's own private wine label. So grab a seat in a plush banquette or a table on the terrace with a striking view of our expansive pool deck, order a filet mignon and pair it with a nice Cabernet Franc from the Marinelli's label.

How many times have you been to a restaurant, looked at the menu and thought to yourself… "There's nothing I'd like to eat on here." There's an art to creating a restaurant menu and a fine line between a menu that's overwhelming and one that doesn't have enough choices. So how does one go about creating the perfect menu? We sat down with our Vice President of Food & Beverage Anthony Layton-Matthews to learn just that.

Why is developing a restaurant's menu so important?

Your menu ultimately determines the types of customers you will attract, the employee skills that are necessary, the equipment you need, and the sales and profit your restaurant will produce. There's a lot of thought that goes into a restaurant menu aside from what sides will be offered with each entr?e in Veloce.

What factors do you consider when creating the restaurant menus here at the M?There are so many things that we consider like what descriptions we will use to best convey to our guests what they will eat. Those descriptions need to accurately reflect the dish that guests will receive, but at the same time need to make the dish sound delicious and interesting and make them want to order that selection.

We look at pricing and weigh our food cost and portions and also make sure we have a balance of expensive and inexpensive items.

We also consider the menu design; it's a reflection of the restaurant itself. We work with our marketing team to determine the menu layout, color, font choice, etc.

And of course, we look at various items to put on the menu. We evaluate the restaurant and its identity, what competitors are offering on their menus and what items would ultimately set our restaurants apart, what dishes our chefs prepare the best, those types of things.

What do you recommend to those developing or updating a restaurant menu?

• Interview your staff to hear their suggestions and opinions about the menu.
• Talk to your customers. Ask them about why they visit your restaurant.
• Visit all the restaurants in your area that compete directly for your customers. Note their volume of sales, the type of menu items they feature, their price range.
• Stay up to date with culinary trends. Know what's new on the horizon.
• Try new items as daily specials at varying price points to test their popularity.
• Improve the name, description, presentation of all high profit items.
• Plan the layout of your new menu. Simple layout changes to the menu can help a great deal and make it easier for customers to find your signature item dishes.

What makes our restaurants unique?

We pride ourselves on offering our guests a warm, comfortable atmosphere that offers food that is both approachable and a great value for our guests. At the end of the day though, our service sets us apart and everyone from our hostesses to our waiters and bartenders strive to make sure each guest has an unbelievable experience from start to finish.

What's your favorite item on our menu?

We have some great items on all our menus, but I'd say the Ahi Tuna Tartare with preserved lemon featured in Veloce is my favorite. Everything from the presentation to the combination of flavors is extraordinary.

Your happy hour options are almost endless here in Vegas - just about everybody has one (or several) and everyone is trying to get you to come to theirs. Isn't it a bit confusing though? Don't you hate having to plan your schedule around the happy hour or even happy hours? "We have to get there by 6 or we'll miss happy hour!" "Would you like to order another drink - happy hour ends in a few minutes?"

Offered 5-7pm now through the end of February, the upscale steak and seafood restaurant is delivering delectable half-price premium cocktails and half-price appetizers in their bar and lounge area. We weren't able to capture everything that was being served when we dropped by, but what we did see looks, smells and tastes delicious. Add that to a hip and stylish atmosphere and you've got a must-experience this weekend.

Ravello Lounge isn't just a great place to see live entertainment - it's also home to some pretty amazing technology. Not only are there more than 40 screens built into the walls that can showcase the onstage entertainment, but the large panels next to the screens can be programmed to visually match audio beats and more through visual representation.

With warmer weather on the way, it's almost time to start enjoying dining al fresco. Veloce, Marinelli's, Terzetto and Hash House all feature great outdoor terraces where you can enjoy your meal, the weather and spectacular views of the pool area and Strip.

Hmmm, what to enjoy out on the terrace? How about some of the amazing cocktails Veloce is offering for Happy Hour in their bar & lounge? Red Sangria, Peach White Sangria and Rocks Margaritas with a superb selection of top-shelf tequilas for just $5 are all excellent choices.

Back to those details. When we have meeting/conference groups here with us at M, we do our utmost to show them we appreciate their choosing M Resort. From custom welcome messages on our marquee to these super-cool light-logos displayed in the water features behind check-in, we want you to feel welcome and appreciated.

Nobody likes to have to go to the doctor, but it sure is nice to have one right down the corridor. M Family Care is like any other doctor's office, it's just located inside M Resort!

Be prepared to drink, dance and flirt the night away in the sexiest wine bar in Vegas while indulging in drinks and a buffet spread of decadent chocolate desserts and other delicious sweet treats. Wine is one of those things that is very much subjective. There are some you love and others you just can't stand. And don't you hate it when you order an entire glass of one that you really don't care for? No worries in Hostile Grape: the enomatic wine machines here allow you to taste a huge variety of wines in one, three and five ounce pours with prices to match. Get a small taste if you're trying something for the first time that you're not sure about, or get a whole glass if it's a favorite.

The M Girls 2011 Calendar is definitely cool, as are the ladies themselves, and this is one cool thing here at M that won't be around forever so get 'em while they last. They're available for just $10+tax at 32 Degrees and Studio B Buffet and part of the proceeds goes to benefit the American Cancer Society.

There are some absolutely amazing chandeliers and other light fixtures here, but perhaps the most spectacular is in M Bar. It's made of thousands upon thousands of individual pieces that took an awful long time to assemble. It's definitely worth a gander.

How about another "M" something? It's our M Cider and it will definitely make you go "Mmmmm."

Want to rid yourself of that winter chill? Try the therapy pools at Spa Mio. They'll warm you up and relax those holiday stress knots right out of you. Ooh! Cool chandelier again!

Yes it's more wine, but it's really the room we wanted to point out. This is the electric wine room at Marinelli's. It's electric red and just so happens to house some pretty amazing reds you can enjoy with dinner.

Tucked between Terzetto and the Lobby Bar is the Oyster Bar. It's a great spot to saddle-up for some delicious seafood treats and easy conversation.

Here's one of our other favorite "M" things - the M sign on the side of the hotel tower. It can be programmed to do all sorts of cool things and if you come out to the property right now, you'll see it's gone all candy cane for the holidays.

If you haven't dined outside on the Terzetto patio, it's a must. The view is great and the infinity pools are definitely cool. They also make a perfect aisle if you're looking for a unique spot to get married.

The obelisk out by the porte cochere is something you should take a gander at. It's made of bronze and kind of resembles a gun sight. If you follow its line, it travels through the lobby, out over the pool, across the main stage and out to the famous Las Vegas strip.

And how about that main stage? An amazing view for guests and performers alike.

Okay, okay, maybe it's just a ballroom, but it's a HUGE ballroom and you might not have even known it was here tucked away on the spa level. Reception after Terzetto patio ceremony? Yep.

There's no better motivation to get fit than gazing out over our spectacular pool. Our fitness center offers a view for aesthetics and to help you keep going.

Antique tractor in a casino? Cool.

You may not have known what you were looking at, but the tiles covering the columns and ceiling on the casino floor are mother of pearl.

Maybe you've never used it or even seen it, but there's a sweet glass elevator between the Lobby Bar and Oyster Bar - it travels down to the spa level and then further down to Hostile Grape.

That's right, M Resort has a gas station and you can use your iMagine Rewards points there. Nice.
