Marinelli’s customizes guests’ fish entrees by offering selections served either grilled or pan seared. Did we mention our fish arrives here in 18 hours or less fresh from the ocean?  It’s seafood (in the desert) at its best!



2. Imperial Burger

   There’s a lot of gourmet burgers out there, but the Imperial Burger takes the cake – err, bun. Topped with stout braised short ribs, mushrooms, gruyere cheese, and caramelized onions, your mouth will get the royal treatment after just one bite of this beer-infused creation. Wash it down with a selection from our extensive beer list or try one of our unique brewtails (beer cocktails).



3. Seafood Brunch or Dinner

   There’s a reason our buffet has been voted “Best in Las Vegas” for two years now! It might have something to do with over 200 food items to choose from including our famous crab legs, oysters and shrimp. Or, maybe it’s the unlimited wine and beer that comes included with every meal. We think it’s probably a little of both. Enjoy our award-winning seafood buffet Friday evening and all day on Saturday and Sunday.



4. Bone-In Filet Mignon
   Anthony’s Steakhouse
   One of Anthony’s signature prime beef selections, this 18 oz. dry-aged hunk of beef is one to be slowly savored. The aging process for the bone-in filet provides an extra flavor that can’t compare to its boneless counterpart. This delectable creation is served with your choice of béarnaise, peppercorn or bordelaise sauce.



5. Andy’s Sage Fried Chicken Benedict
   Hash House A Go Go
   Not only was this dish included as one of Las Vegas Weekly’s “50 Must-Eat Las Vegas Meals” but it was also featured on Man vs. Food. This colossal creation is certainly not for those who favor lighter fare. Chipotle cream with peppers, scrambled eggs, griddled mozzarella, fried chicken, bacon, tomatoes, spinach and a biscuit are all piled high atop a heap of griddled potatoes.

Throughout the resort, specifically in Baby Cakes and Studio B Buffet, we proudly display evidence of our bakery team's talent (surely in an effort to get you to inquire about our amazing sweet creations!). But what goes in to creating one of these elaborate cake displays? The designs themselves are brainstormed by our professional pastry decorators. The team seasonally researches new recipe trends and then creates a variety of concepts making upwards of ten display cakes seasonally. Ingredients like rolled fondant (an icing-like substance), butter cream, hand-spun sugar toppers, and a gum base are carefully formed to create a lasting breathtaking model. These beautiful cake displays are very labor intensive, with each taking up to a full day to complete.

Our message to you is simple; if you can dream it; our bakery team and cake decorators can make it happen. The edible version of each display cake can feed hundreds of people and our bakery takes custom orders for weddings, special events or any occasion that an extravagant treat is needed!

Most of us have already celebrated the beginning of 2012, but the end of this month marks the beginning of Chinese New Year. The Chinese culture celebrates each New Year according to the lunar calendar which is why the date fluctuates from year to year. January 23 marks the beginning of the celebration for the auspicious Year of the Dragon.

The Dragon is the most powerful of all 12 signs in the Chinese Zodiac, which associates an animal to each calendar year. Everyone born in 2012 will be considered a Dragon. Dragons are said to be dominant, ambitious, driven, willing to take risks and unafraid of challenges. These strong character traits are said to cause an increase in births for every Dragon Year. Dragons are also said to be charismatic leaders. In the year 2000 the birth rate in China spiked and is expected to do the same this year.

Each Dragon Year is also associated with one of the five elements (metal, water, wood, fire and earth). 2012 is the year of the Water Dragon. Water Dragons are able to see things from other points of view. They don't have the need to always be right. Their decisions, if well-researched, are usually better since they allow others to become involved.

To kick-off the two week celebration a traditional Dragon Dance will be held on Monday, January 23 at 6pm to bring good luck and fortune for our guests. A 63 foot-long dragon will feature adult and baby lion dancers, buddhas, musicians and festive flags and will make its way through our entire casino.

Studio B Buffet will feature eight hard-to-resist New Year specialties. Until February 6 you can feast on Meatballs with Bok Choy, Poached Chicken with Ginger and Scallions, Spinach and Bamboo Shoots, Beef Lo Mein, Tofu and Eggplant with Black Bean Sauce, Lettuce Wraps, Mandarin Oranges with Leaves and Spring Rolls. Our bars will also be serving up specialty cocktails, a Lychee Martini and a Mulan cocktail.

Starting this Friday our limited edition Year of the Dragon gaming chip will be available. Keep the good luck coming and purchase the chip at our casino cage for $8. The chips will be available until supplies last.

So what's the appeal of petite pastries? Any dish twice as small as its original somehow becomes twice as irresistible. The bite-sizes allow you to indulge and sample many different treats without the temptation of devouring an entire cake or pie. Some of our most popular small sweets include classics like tiramisu, ?clairs and good old fashioned cheesecake.

Our bakery team has mastered the art of scaling down full-size recipes into the smaller portions that our guests love. The recipes don't have to be altered much, just the portioning of the actual treat. The real task is in the d?cor, the decorations on each pretty pastry are smaller and more intricate than its full-sized counterparts.

These guilt-free indulgences aren't just good for your diet; they're also good for your wallet. Miniature pastries at Baby Cakes go for about $2, a small price to pay for desserts whipped up by a gourmet pastry chef. At Studio B, all the sweet treats you can devour are included in the price of your meal.

Sushi in the desert may seem hard to come by but Las Vegas alone consumes a large portion of the nearly five billion pounds of seafood consumed in the U.S. each year! With the closest ocean being pretty far away from M, you may wonder how it's possible for us to get the fresh, high-quality fish that's served in our restaurants. Well, it's with a little help from Honolulu Fish Company. The company flies all our seafood in daily from Hawaii. So savor that next bite of tuna, it did a lot of traveling just to get to your plate.

Here at our resort, we like to put a little M into everything we do. While we still serve your standard sushi favorites like Spicy Tuna Roll, Caterpillar Roll, Rainbow Roll, etc. we also have our own signature rolls that you can't find anywhere else. We think the multiple awards might have tipped us off. Maybe it's the selection of over 200 dishes you have to choose from, the gourmet desserts from our world-famous Parisian pastry chef Jean Claude Canestrier, the modern ambience which includes a 116-screen video wall or like we already mentioned, the unlimited beer and wine.

No matter what your food (or drink) vice may be there's a lot of work that goes in to preparing masses of (high-quality) food for our buffet diners. Our resort likes its Italian flare, whether it's the design of the property or the food we serve. You can get your dolce (Italian for dessert) fix from our very own Italian restaurant Marinelli's. They serve up classics from "the old country" like Tiramisu, Cannolis, Bombolinis, Panna Cotta and more. At our steakhouse Anthony's, you can find some of the newest dessert options at M. Try their signature Peanut Butter Pie, Chocolate Souffl? or maybe their spin on Coffee & Donuts will be the perfect ending to your meal.

For desserts with a twist, try Hash House A Go Go's Chocolate Snickers Bread Pudding. This take on a modern candy bar is homemade bread pudding baked with chunks of Snickers candy bars and Hershey’s chocolate syrup and topped with Vanilla Bean Ice Cream, homemade caramel sauce and chocolate syrup.

If you find it hard to choose just one dessert (and we always do) Veloce offers a dessert tasting. You can select from one, two or even three delectable desserts to try at once! The restaurant offers choices like a Mini Strawberry Martini (not the kind you drink), Bananas Foster and Chocolate Torte.

At Studio B Buffet, not only can you sample cuisine from around the world, you can get a sampling of desserts from around our property! Try miniature samplings of cr?me br?l?e, cookies, cupcakes, meringue, gelato, macaroons and much more. And remember, they're all you can eat!

Sometimes you like something so much you want to take it home with you. At Baby Cakes, M's very own European-inspired patisserie you can find a whole case of sugary sweetness to please any craving. They also offer a full gelato station with 19 flavors by the scoop (they can even be bought by the pint).

Dine with Dad

We know how much you love our buffet, you did vote it "Best in Las Vegas" after all. We also know that Dad deserves the best! So, taking Dad to our buffet is pretty much a no-brainer. Treat him to a seafood brunch on Saturday or Sunday featuring heaps of crab legs, shrimp and oysters plus many more dishes of all-you-can-eat goodness. It doesn't stop there either, there's also all-you-can-drink beer, wine and hard cider. So grab a plate (or three or four) and feast with your father on his special day.

If your Dad's a little more formal might we suggest a steak dinner? As we recently mentioned, our steakhouse, Anthony's will be debuting this Friday. If there's one thing we know Dad likes it's a good steak and Anthony's got them ready to serve up.

Aaron Hill, Digital Media Manager for M Resort

You see them all around our resort, the digital displays showcasing the endless amenities we have to offer you at our resort, digital eye-candy if you will. Ever wonder what goes into making those flashy displays you see around the M and all around town? Let's just say it takes more than a few click of the mouse to get things just right for your viewing pleasure.

Whether it's the 116-screen video wall in Studio B Buffet or the giant marquee sign situated in our front lawn, there's a main man that makes sure it all comes out (visually) perfect and that's our Digital Media Manager Aaron Hill. Did we mention our marquee is one of the highest-resolution signs in town? But hey, we're not one to brag or anything.

How did you get into the unique career of Digital Marketing?

I had previously worked as a print designer for 10 years and in my spare time I always enjoyed dabbling in Digital Media or any type of marketing design that had a technical aspect to it. I was given the great opportunity by M Resort to receive formal training in Digital Media in order to make the full crossover into that career path.

What do you like most about this field?

I truly enjoy the constant challenges that Digital Marketing presents, it always keeps me on my toes. Having to create and manage content over multiple platforms that have numerous dimensions is no easy job, but I take pride in being able to conquer it every day.

The best part of my job is using my creative vision. Knowing that I am able to put my personal stamp on our brand makes the effort it takes for everything to run smoothly, worth it. Plus, it's always nice to see my work displayed in public.

What's your favorite type of signage to work on at M?

Creating original art for our 116 screen video wall in the buffet is the most fun for me. The screens have such a unique format since its dimensions are extremely horizontal. The dimensions allow me to really use my creative edge to produce something special. I've also been lucky enough to experiment with a lot of various artistic ideas for these displays over the last few years. Flexing my imaginative muscle makes the aspect of creating digital displays more rewarding.

Aaron has been with the M prior to the resort's Grand Opening in 2009.You can look for his work on over 220 digital displays throughout the M Resort.

So you indulged at our buffet and maybe had a cupcake (or two) from our bakery and washed it all down with one of our 96 beers on tap. There's nothing wrong with this (we're all about indulging), but even during your getaway in Vegas you'll want to stay in shape with places like DayDream Pool Club to hang out at. We know it's hard to make it to the gym, especially when you're traveling, so we're here to offer you a few travel-friendly fitness tips that you can practice here at M or wherever you might be traveling.

Take the stairs. We know elevators are much more convenient, but think of the burn you'll feel after walking from our casino level to our pool and spa level, or even all the way down to our wine cellar, Hostile Grape. Your lungs will thank you and you’ll thank yourself when you look at your killer legs.

Bring your running shoes. Why not add a little motion in your day? Lace up your sneakers and take a tour inside and outside our resort. We’re situated on more than 90 acres and with an expansive 100,000 square foot pool deck, you’ll have lots of time to get your fresh air fix, plus we have lots of great art to gaze at while walking around indoors.

Stay hydrated. It's a desert out there (no really, it is). Be sure to drink lots of water, it will help keep your body going and increase your metabolism so you burn more calories than normal, and it also helps maintain your muscle tone.

Bring your yoga mat. Starting or ending your day with yoga does the body good. And, rolling up your yoga mat and packing it for your trip takes a minimal amount of time and space. You can even practice your yoga moves in the privacy of your own hotel room.
