<p>Las Vegas may be far from the ocean, but we&#39;re able to give our guests fresh seafood in the desert (which may seem impossible) thanks to Honolulu Fish Co. (HFC). The Hawaii-based fishery ships seafood fresh from the ocean to our <a href="http://www.themresort.com/blog/2012/02/ordering-up-for-m/" target="_blank">loading dock</a> in 18 hours or less on a daily basis. <a href="http://www.themresort.com/dining/dining.html" target="_blank">Our chefs</a> are able to keep guests&#39; seafood cravings satisfied and serve up the freshest, highest quality fish every day thanks to HFC&#39;s fish shipments.</p>
<p>The 18-hour process begins with fishermen catching the fish. HFC then processes the fish using the Japanese &quot;iki&quot; method, which is the industry standard for producing sashimi-quality meat. The fish are ice killed and bled immediately (while the heart is still beating). They are promptly chilled down to near freezing temperature levels. The boats even lay carpet on their decks so the fish can be processed on a soft surface. This process is necessary to produce the highest quality meat for the raw fish market.</p>
<p>HFC puts the fish they ship through strict quality standards. All of their fish are caught using sustainable fishing methods; they do not use nets, traps or trawls in the process. The seafood must be &quot;iki&quot; processed and their fish meat must have high translucency, low water content, high oil content and PH.</p>

<p>After the &quot;iki&quot; processing method, the fish are packaged in thermo dynamic heat shielded boxes. The meat is vacuum sealed and then packed with custom gel ice and specially developed absorption pads that help to prevent excess moisture. They are immediately shipped via Fed Ex Air to the <a href="http://www.themresort.com" target="_blank">M Resort</a>. Once the shipment arrives at our loading dock, it is sorted and sent up to our different restaurants to be prepared by our amazing chefs!</p>
<p>If you&#39;re dining on Sashimi Tuna, Mahi Mahi, Ora Salmon, Ono, Swordfish, Snapper or Grouper at any of our restaurants, you&#39;re enjoying fish that came straight from Hawaii. The sushi bar to be exact! We&#39;re particularly fond of sushi rolls, in fact we love this Japanese specialty so much you can eat it at three different places at <a href="../../">our resort</a>! Our rooftop restaurant <a href="../../dining/veloce.html">Veloce</a>, Anthony&#39;s <a href="../../dining/anthonys.html">Oyster Bar</a>, adjacent to our steakhouse and even our buffet <a href="../../dining/studiob.html">Studio B</a> all serve a different variety of sushi, sashimi and nigiri.</p>
<p>Sushi in the desert may seem hard to come by but Las Vegas alone consumes a large portion of the nearly five billion pounds of seafood consumed in the U.S. each year! With the closest ocean being pretty far away from <a href="../../">M</a>, you may wonder how it&#39;s possible for us to get the fresh, high-quality fish that&#39;s served in our restaurants. Well, it&#39;s with a little help from Honolulu Fish Company. The company flies all our seafood in daily from Hawaii. So savor that next bite of tuna, it did a lot of traveling just to get to your plate.</p>
<p>Here at our <a href="../../">resort</a>, we like to put a little M into everything we do. While we still serve your standard sushi favorites like Spicy Tuna Roll, Caterpillar Roll, Rainbow Roll, etc. we also have our own signature rolls that you can&#39;t find anywhere else. <p>When one door closes, another one opens. Anthony&#39;s Prime Steak &amp; Seafood Restaurant will make its official debut this Friday, in place of Terzetto, and just in time for Father&#39;s Day (hint, hint). The kitchen will be churning out prime wet-aged steaks, king crab legs and many more of our President Anthony A. Marnell III&#39;s personal favorites. <em>Our</em> personal favorite is the Peanut Butter Pie, so be sure to save some room for dessert.</p>

<p>The restaurant&#39;s elegant, yet casual, dining space will offer the perfect atmosphere to <a href="../tag/wine/">wine</a> and <a href="../category/dining/">dine</a> Dad, or anyone else worthy of a mouth-watering meal. In fact, here&#39;s a little fun fact if your dad is a baseball fan: the restaurant&#39;s design was inspired by Anthony&#39;s own worn baseball. You&#39;ll see touches of warm gold and beige along with masculine elements of mahogany wood and marble throughout the restaurant.</p>
<p>The extensive menu even includes selections from the Marnell&#39;s own private wine label. So grab a seat in a plush banquette or a table on the terrace with a striking view of our expansive pool deck, order a filet mignon and pair it with a nice Cabernet Franc from the Marinelli&#39;s label.</p>
