 When it comes to cool things suspended from the ceiling, head down to Hostile Grape. Those are thousands of slats from wine barrels which came from the Marnell winery in Napa. An artist put them together, numbered them, took them all apart, then reassembled them here at the property.

Secrets behind F&B at M Resort

If you’re a regular reader of The M Point of View blog, a visitor to the property or even a fan of reality TV, you probably know that food and beverage is one of the most, if not the most important component of what M Resort has to offer. From the award-winning Studio B Buffet to the unique views and culinary delights offered by Veloce Cibo, food and beverage is integral to what we do here. That being said, we thought we’d offer you an insider’s view of some F&B secrets at M:

The property has nearly 30,000 square feet of kitchen and work areas dedicated to the culinary arts.

Want that crusty ciabatta that tastes just like it does in Italy? At the M Resort, you’ll get it. The resort “creates” its own water on-site to make its breads and pastries. The PH balance of the water can be adjusted to match the exact PH balance of water in any city in the world. When it comes to making bread and pastries, the interaction between the water and the other ingredients is critical, creating distinct flavors and textures. New York-style bagels are made with water that matches New York and French baguettes are matched to water in Paris.TerzetoNewYorkStripblog

Farm fresh is not just a saying at the M Resort. The property offers a reserve list of beef from the Marnell family ranch in Montana in the Terzetto Steak and Seafood restaurant. Much like a reserve wine list, the reserve beef list offers connoisseurs a taste and tenderness that will definitely impress – our guests go through 6,000 pounds a month.

Fresh from the sea? Well not quite, but as close as we can get. A peek inside our main kitchen reveals holding tanks where seafood is kept “still kickin’” as long as possible to offer you the freshest product on your plate.

Charcuterie? That’s the fancy French word for a place you cure and sell meat. Here at M, we cure our own meats such as pastrami, salami and pepperoni. We’re ageing our own cheeses too.tapsblog

Not only will you find 96 different beers and ciders on tap at 32 Degrees Draft Bar, you’ll even find M’s own cider. Why 32 Degrees? Well, we designed this bar to allow the keg storage to be directly below the taps. Why, you might ask? Less time from keg to tap means much colder beer for you.

You’ll find more than 160 wines by the glass in Hostile Grape, offered up by one of the largest Enomatic® wine dispensing installations in the United States. Several of these wines (six different labels in fact) come from grapes produced at the Marnell family vineyard located in California. We not only serve this wine in our bars and restaurants, but also gave 250,000 bottles of it away to our iMagine Rewards members last year.

Italian Fest
Drum roll please…the Italian Festival is back! 

 Now, some of you might remember the Italian Festival and some of you might not, so we’ll do a quick refresher course and then talk about this weekend’s big event.

First begun by the Marnell family 17 years ago at the Rio All-Suite Hotel & Casino, the Italian Festival was a locals’ favorite, attracting thousands of people over the course of the two-day event. For a decade, the Marnell family Italian Festival was the talk of the town. Now, they’ve brought it back at the M Resort – with a few added twists.

Our Italian Festival weekend is all about food, fun and entertainment for the entire family. (By the way, admission is free!) Here’s a rundown of what you can expect.

 Pasta Baby A Feast for the Senses

Stroll through our outdoor piazza and treat yourself to authentic Italian dishes like calzones, pizza, sausage and pepper sandwiches and various specialties prepared by local restaurants and our very own world-renowned chefs. We’ll also have over-the-top desserts like cheesecake, cannoli, biscotti, Italian ices and the ever-popular fried dough.

For the Bambinos
We have face painting, colorful balloon art, airbrushed tattoos and roaming stilt walkers – not to mention great live entertainment by Louis Prima Jr. on the main stage at 3, 5 and 7 pm Saturday and Sunday.

Grape Stomp
You can check out your favorite local radio and TV personalities as they compete during one of our Grape Stomping Competitions on Sunday at 2 pm.  We also have public contests throughout both days.

Spaghetti Eating Contests
If clearing your plate comes easy, save room for spaghetti and put your skills to the test at our Spaghetti Eating Contest. Kids and adults can sign up at our festival information booth.

Bocce Ball Tournaments
If a true competition is more your style, sign up for our bocce ball tournaments or free play hours.

 Farmer’s Market
Authentic Italian cuisine can only be achieved with the freshest of ingredients. Shop Italian-style at the open air Farmer’s Market and take home delicious fruits and vegetables.
