Enomatic systems are able to dispense wine directly from the bottle and use inert gas preservation to do so. With such technology, the flavors and characteristics of the wine remain intact, as if the bottle had just been opened. If you tasted a glass poured from our machines and one from a freshly uncorked bottle, chances are you wouldn’t even be able to tell the difference.

Using Enomatic’s portion control technology, our guests are able to sample wines at Hostile Grape by pours of one, three and five ounces. To choose your pour simply insert a pre-paid card into the machines and choose how many ounces you’d like to try. The wine is then instantly dispensed in a fountain-like flow right into your wine glass.

With the majority of our wine collection on display in the Enomatic Machines, we invite you to explore our selection yourself. Peruse our wine stock and personally select the wines you’d like to sample.

The spouts themselves go through an automatic self-cleaning after each pour, guaranteeing your glass is just as fresh and clean as the first.

Party

We think cover charges are overrated so we invite our guests to celebrate without waiting in line or paying an entry fee. We’ll be offering complimentary party favors, and cake and champagne stations throughout our casino. Toast the New Year with us and enjoy live entertainment beginning at 9pm in Lobby Bar, Ravello Lounge, M Bar and Hostile Grape. See which venue is the right fit for your celebration style.

Ravello Lounge – The New Year’s evening will kick off in our lounge with go-go dancers and a DJ spinning hits to get the party started, beginning at 9pm. At 10pm, 80’s tribute band Loveshack will take the stage and sing the best of the 80’s and 90’s and some NYE-style party music. The entertainment in Ravello will be going all night long and is ideal for our high-energy party goers.

Lobby Bar – Relax at Lobby Bar and take in a performance by Lowkey Junction. The band is a unique blend of masterful music mixes, live percussion and saxophone. With the best people-watching views, Lobby Bar is the perfect fit for a relaxed New Year’s celebration.

M Bar – For those who like to be at the center of all the action, M Bar is for you. Located in the middle of our casino floor, DJ Simon and go-go dancers will be kicking off this party at 9pm. Get there early for a seat on M Bar’s cushy couches or get your groove on to the tunes DJ Simon will be spinning.

Hostile Grape – Take a sip of more than 160 wines by the glass in our underground wine hideaway. Veteran DJ Art will be mixing up the music for the night for the oenophiles.

Play

End the year with good luck here at M! We’ll be giving away $24,000 in free pay randomly beginning at 8pm on New Year’s Eve. Every 15 minutes we’ll be drawing 10 winners. Two players will win $300, four players will win $150 and another four will win $100. All you have to do is play with your iMagine Rewards Card to be eligible.

Dine

Our restaurants will be ready for you to kick-off the New Year’s festivities. Marinelli’s, our authentic Italian restaurant will be offering a la carte specialty items in addition to its regular menu beginning at 4pm and our steakhouse, Anthony’s will be serving up a limited menu for the holiday starting at 5 pm. And of course, Studio B Buffet will be serving specialty dishes all day.

There are five different selections of Marinelli’s wine to choose from at our resort. If you visit Hostile Grape you can sample all of these wines (and 155 others) by the glass.

Sangiovese

Made from the classic Italian grape grown in the best areas of California, Marinelli’s Sangiovese has ripe aromas of red and black raspberry with a touch of bread dough. The wine projects flavors of rhubarb, blackberry and spicy notes. Its finish is marked by sweet tannins, brandied cherries and almond biscotti. This Sangiovese is made with both punch cap fermentation in open tanks and closed tanks. Each lot is aged separately for 20 months in French and Eastern European Oak barrels.

Chardonnay

The Chardonnay from the Marinelli’s wine label has notes of pineapple and honeysuckle. It’s crisp, fresh and bright with citrus and green apple flavors and subtle oak notes. Marnielli’s Chardonnay is a medium-full bodied wine, rich with excellent acid balance and firm texture. This wine is barrel fermented and aged for nine months in specially-made French oak barrels.

Pinot Grigio

This bright and crisp Pinot Grigio is dry with a rich fruit center. It’s pressed directly to a stainless steel tank and is cold fermented for three months. It is then aged in stainless steel tanks before bottling. This particular wine on the Marinelli’s label pairs perfectly with a wide range of cuisines.

Cabarnet Franc

The aromas of ripe plum, clove and hints of damp leaves come out immediately in Marinelli’s Cabarnet Franc. Black currant and pungent clove flavors abound on the palate followed by sweet tobacco, cedar plank and a welcome shot of tannin on the smooth finish. The Cabarnet Franc is punch cap fermented and then balance fermented in stainless steel tanks using the pump-over process. It is aged for 18 months in a combination of old French and European cooperage.

Merlot

The Marinelli’s Merlot has plum and blueberry on the nose, firm tannin, medium plus body, plum and blueberry on the palate and a touch of oak on the finish. It shows balance and richness with distinct Merlot flavors. It’s fermented on the skins for eight days and aged for 22 months in French oak barrels.

This past Saturday we launched a new entertainment option for M, ‘M Pool Live!’ This free ongoing outdoor summer concert series is set in the lovely backdrop of our pool (an ideal venue if you ask us) and gives guests, like yourself, the opportunity to take a dip under the stars and drink, dance, mix and mingle all in our backyard. And did we mention it’s FREE? That’s right absolutely no cost to anyone who wants to come out and enjoy. We know, it’s a sweet deal (you’re welcome.)

Performer Wes Quave (who just came off opening for the legendary Prince) kicked-off the series for us this past Saturday night.

His nine-piece band and hot dancers who helped set the mood for the evening.

Guests enjoyed our poolside gaming pit, playing Black Jack all night long.

Specialty cocktails were served; the mojitos were the most popular choice (try the Mint Mojito this Saturday!)

Some guests relaxed around the stage in our lounge chairs while others took a nighttime dip in the water.

If you didn’t get a chance to experience ‘M Pool Live!’ for yourself yet, you have a chance this Saturday night. Daybeds by our pool are offered on a first-come first-serve basis (read: also free) and cabanas are open for reservations too.

We caught up with Sam Bennett, our wine guru and sommelier at Hostile Grape and had him share some of his summer wine selections with us.

“In the summer I always enjoy white still wines and especially sparkling wines.  There is something very refreshing about Sauvignon Blanc, Riesling and champagne when the temperature heats up,” said Bennett.

Honig Sauvignon Blanc from Napa Valley has always been one of his favorites for the warmer seasons.

“The gooseberry, melon and touch of grapefruit with crisp acidity is really refreshing.  Monchhof ‘Mosel Slate’ Riesling-Spatlese from Germany is lower in alcohol than most still white wines and has a nice touch of sweetness.  The aromas or fuzzy peaches and other stone fruits present in this Riesling also make it a huge crowd pleaser.”

Although wines are not to be missed during the summer months, champagne always holds a special place for Bennett.

“Its effervescence (that’s bubbles if you don’t have a wine dictionary neary you!) and refreshing qualities make it perfect for pool time as well as patio time.  Yeasty, bready, Brut Champagne is my favorite in the summertime.”

For unique summer wines Bennett recommends ‘Brachetto D’Acqui,’ Banfi, “Rosa Regale.”

“It is a sparkling wine that is a little closer to red wine than a rose that comes from the Piedmont region of Italy.  It has a slight touch of sweetness and is really great when served chilled.”

Wine is one of those things that is very much subjective. There are some you love and others you just can’t stand. And don’t you hate it when you order an entire glass of one that you really don’t care for? No worries in Hostile Grape: the enomatic wine machines here allow you to taste a huge variety of wines in one, three and five ounce pours with prices to match. Get a small taste if you’re trying something for the first time that you’re not sure about, or get a whole glass if it’s a favorite.

The M Girls 2011 Calendar is definitely cool, as are the ladies themselves, and this is one cool thing here at M that won’t be around forever so get ‘em while they last. They’re available for just $10+tax at 32 Degrees and Studio B Buffet and part of the proceeds goes to benefit the American Cancer Society.

There are some absolutely amazing chandeliers and other light fixtures here, but perhaps the most spectacular is in M Bar. It’s made of thousands upon thousands of individual pieces that took an awful long time to assemble. It’s definitely worth a gander.

How about another “M” something? It’s our M Cider and it will definitely make you go “Mmmmm.”

Want to rid yourself of that winter chill? Try the therapy pools at Spa Mio. They’ll warm you up and relax those holiday stress knots right out of you. Ooh! Cool chandelier again!

Yes it’s more wine, but it’s really the room we wanted to point out. This is the electric wine room at Marinelli’s. It’s electric red and just so happens to house some pretty amazing reds you can enjoy with dinner.

Tucked between Terzetto and the Lobby Bar is the Oyster Bar. It’s a great spot to saddle-up for some delicious seafood treats and easy conversation.

Here’s one of our other favorite “M” things – the M sign on the side of the hotel tower. It can be programmed to do all sorts of cool things and if you come out to the property right now, you’ll see it’s gone all candy cane for the holidays.
