Wine Tasting – The Basics

There are a lot of things which connect M Resort with wine – Hostile Grape, our wine bar with more than 160 wines-by-the-glass through our super-cool Enomatic dispensing systems; the Marnell family’s vineyard in California which produces six different labels we serve here at M; the some 250,000 bottles we give away as gifts to iMagine Rewards members every year and of course the fabulous events we host like Rock ‘N Roll Wine’s Reggae Pool Party

With so much here relating to wine in one way or another, we thought it might be helpful to pass along some wine tasting basics that may help you enjoy your wine a little more and possibly discover a new wine you love. Here are some great tips and wine tasting basics from our Assistant Beverage Manager here at M – Charlie Moavero: 

  1. Start with a clear wine glass. The rim of the glass should end inwards to help funnel aromas to the nose and allow you to swirl without spilling.
  2. Now pour a little wine into your glass – an inch or less is best. If you are tasting several wines, begin with the lightest (sparkling wines, roses, then light whites followed by full-bodied whites) and progress to the heaviest (light reds to more full-bodied reds followed by dessert wines). This will help keep your taste buds more sensitive so you can better appreciate each wine in the series. A sip of water between wines can also help preserve your palate.
  3. winetastingblog2Notice the color of the wine. It often helps to hold the glass up to light or hold it against a white background like a white napkin. The color can give you a clue as to the age of the wine. White wines generally gain color as they age. Red wines generally lose color. That is, young red wines are more red or burgundy while older wines tend to show a hint of tawny brown around the rim. Regardless of age, the colors of wine are just fun to see, ranging from pale yellow-green to ruby red to brick red-brown.
  4. Swirl the wine a couple of times by moving the glass in a circular motion. Holding the glass by its stem, instead of the bowl, allows you to swirl more easily. Swirling is done to aerate the wine and release vapors, evaporating from the sides of the glass, allowing you to better smell the wine.
  5. winetastingblog3Put your nose right over the rim of the wine glass and breathe in. Take note of the wine’s aromas and bouquet (the range of smells a particular wine possesses).
  6. Take a sip, letting the wine spread across the tongue from front to back and side to side before swallowing. Notice the flavors and acidity of the wine. How silky or rough does the wine feel?
  7. Swallow a small amount if you wish to note any lingering “finish,” but if you’re tasting a number of wines – in a winery tasting room, for example – your host will usually provide a large container for you to spit out the wine instead of swallowing. (Don’t worry, this isn’t rude!) Everyone in the wine trade is accustomed to the swirl-sniff-sip-slosh-spit routine. No one wants an intoxicated taster or worse, an intoxicated driver. 

The bottom line is that a good wine should always give pleasure. It should smell good, taste even better and be smooth and satisfying by itself or with whatever food you’re pairing it with.

 
 

Enjoy some wine in the sunshine

PoolWineblogWhile we think any time of year is a great time to drink wine, there’s something particularly wonderful about drinking a perfectly chilled glass of white while enjoying the sunshine. Whether it’s by the pool, at a backyard barbecue or at your favorite restaurant or wine bar at M Resort (wink, wink), summer is a particularly good time to enjoy some wine. We asked sommelier Sam Bennett from Hostile Grape for a few of his summer recommendations and here’s what he had to say: 

Drylands Sauvignon Blanc, Marlborough, New Zealand
Sauvignon Blanc is always a good choice for summertime. Sauvignon Blanc from New Zealand has racy acidity, with grapefruit dominated citrus notes and is very crisp and refreshing. This wine and other New Zealand Sauvignon Blancs pair well with shellfish (especially oysters) and salads. The acidity present makes them very food friendly. One must be careful with acidic salad dressings though because clashing acids can be unpleasant.

Riesling is a good choice as well because it is normally lower in alcohol which leads to balance.  Notes of stone fruits dominated by peach, lemon zest and sometimes a little sweetness makes it a good patio wine that pairs well with some Roots Reggae like Peter Tosh and Bob Marley.

Gloria Ferrer Royal Cuvée Sparkling Wine 2001 Sonoma Valley, California
Sparkling wines and champagne are great for the summer as well. The bubbles cleanse your palate and that makes these wines very refreshing. Real champagne from the Champagne region of France will normally have toasty oak notes and “yeasty” and “bready” characteristics. Sparkling wines from California will tend to have more tropical fruit notes and less of the yeasty/bready characteristics. 

Remember these are very general characteristics and individual wines may vary. And don’t forget that wine pairs great with food from the grill – backyard barbecues aren’t just for beer lovers!

 
 

Meet Nancy J. – Concierge Extraordinaire

“Can’t we just ask the concierge?” Have you ever heard that question or asked that question yourself while on vacation and NancyJConciergeblogstaying at a hotel or resort? The answer is “yes” you can ask the concierge.  Here at the M Resort, we have a concierge named Nancy Jeskey and she is the best. Seriously, she is one of the best. She’s one of  just 450 concierge in the United States to be awarded the Golden Keys of Les Clefs d’Or - more on that later.

She’s the best because she can help you with just about anything, has incredible experience and knows Vegas like you know your own home. And trust us, if you want live camels in front of your room, Nancy is the gal to get it done. We sat down with her to find out what exactly a concierge does and why she likes it so much.  Here’s what she had to say:

Q:  Tell us what a concierge does.

A:   Concierges are here to serve every guest – to help them with anything they need. I say, I’ll do whatever the guests needs as long as it is not illegal, immoral or unkind! In a nutshell, we help guests plan their day, provide information and make arrangements for them. 

Q:  How did you decide you wanted to be a concierge?

A:   I love to travel and I truly love to help people. My husband always got a kick out me because if I saw people looking at a map trying to figure out where to go I’d walk over and help them – tell them how to get to where they were planning to go, suggest places to eat, things like that.

Q:  How many years have you been a concierge?

A:   12 years – I entered the concierge profession in 1993 in Indian Wells, California and became a Les Clefs d’Or member in 1998. I was a concierge in California for 10 years and was Palm Springs Life Concierge of the Year in 1996. 

Q:  So, what’s “Les Clefs d’Or”?

A:   Les Clefs d’Or is an international organization of professional hotel concierges. To join, an applicant must have five years experience in the hotel industry and be sponsored by two current members. The application process is so stringent that the organization has just 450 members in the United States. 

Q:  What kind of training did you have?

A:   Your training is really on your knowledge of the city. I am a member of the Southern Nevada Hotel Concierge Association and a past president of the Desert Resorts Concierge Association in the Palm Springs area. 

Q:  Where did you work prior to coming to the M Resort?

A:   I’ve worked at Renaissance in Las Vegas, Esmeralda Renaissance in Palm Springs and the Hyatt Grand Champion. I’ve been with the M Resort since its opening.

Q:  What, in your opinion, are the “must-have” characteristics to be a good concierge?

A:   Knowledge of the city you live in is key. I’d also say the ability to multi-task, a genuine desire to help others and good ethics and conduct – remember you represent your hotel. 

 Q:  What is the most rewarding part of your job?

A:   The people. They are so grateful for your help. I can make them feel at home and comfortable. Guests trust concierges and expect us to know the ins and outs of the city. It’s rewarding when I can help them navigate their way around. This is my most favorite job by far. I hope to be a concierge for many more years.  

Q:  How do you stay on top of what is happening around the city?

A:   I belong to professional associations so we are able to network and share what’s happening in the city with each other. Networking is so important. I read everything I can, experience as much as I possibly and drive around constantly. Las Vegas changes all time so it’s important to network and get out and experience the city. If I’m helping a guest with tickets to see a show at a property on the Strip then I want to be able to tell them exactly where they need to go from the parking lot all the way to the show entrance.

Q:  What is a typical day like for you?

A:   A typical day is helping people with anything from shopping recommendations, to purchasing tickets for shows to helping them with transportation.  

Q:  What has been one of the most unique things that a guest has asked you to help with?

A:   I had a guest in Palm Springs ask me to get two live camels and stage them in front of his friend’s room as a practical joke. If you can believe it, it only took me 20 minutes to get them rented! It was so much fun.

 I also once had a Sultan whose entourage called down and asked me to get him and his entire entourage on a plane to Paris that same day. His entourage took up two entire floors of the property so you can imagine how many of them there were. I called around, spoke to my counterparts in Paris and had them all on a plane within three hours.  

Q:  What are your favorite places in Vegas?

A:   I love the M – it’s a beautiful property and definitely one of my favorites. If guests are looking for places on the Strip to eat I tell them to eat at Joel Robuchon or Fleur de Lys or to see Human Nature. It is one of my most favorite shows. I also really enjoy Le Rêve. 

Q:  What do you recommend guests at the M do while they’re here?

A:   Veloce is an absolute must – it’s romantic and has one of the best views of the city. Spa Mio treatments are another must while they’re here. Hostile Grape is my favorite place – I love the entertainment and the wine, of course! And now that pool season is here, a cabana by the pool is another must-do.  

Q: You’ve traveled extensively. Where is your favorite place that you’ve traveled?

A:   Traveling has certainly helped me to be a better concierge. Hawaii is my favorite place, but if I could live anywhere I’d live 4four months in Hong Kong, four months in Paris, four months here in Vegas and four months in Hawaii. 

Q:  How you met any interesting celebrities or helped any interesting people?  

A:   George Hamilton was one of my favorites and just the nicest person. I also enjoyed helping Pamela Anderson and Frank Sinatra. I knew Frank personally and was there for the christening of his grandkids.

 
 

Secrets behind F&B at M Resort

That being said, we thought we’d offer you an insider’s view of some F&B secrets at M:

The property has nearly 30,000 square feet of kitchen and work areas dedicated to the culinary arts.

Want that crusty ciabatta that tastes just like it does in Italy? At the M Resort, you’ll get it. The resort “creates” its own water on-site to make its breads and pastries. The PH balance of the water can be adjusted to match the exact PH balance of water in any city in the world. When it comes to making bread and pastries, the interaction between the water and the other ingredients is critical, creating distinct flavors and textures. Farm fresh is not just a saying at the M Resort. The property offers a reserve list of beef from the Marnell family ranch in Montana in the Terzetto Steak and Seafood restaurant. Much like a reserve wine list, the reserve beef list offers connoisseurs a taste and tenderness that will definitely impress – our guests go through 6,000 pounds a month.

Fresh from the sea? Well not quite, but as close as we can get. A peek inside our main kitchen reveals holding tanks where seafood is kept “still kickin’” as long as possible to offer you the freshest product on your plate.

Charcuterie? That’s the fancy French word for a place you cure and sell meat. Here at M, we cure our own meats such as pastrami, salami and pepperoni. We’re ageing our own cheeses too.tapsblog

Not only will you find 96 different beers and ciders on tap at 32 Degrees Draft Bar, you’ll even find M’s own cider. Why 32 Degrees? Well, we designed this bar to allow the keg storage to be directly below the taps. Why, you might ask? Less time from keg to tap means much colder beer for you.

You’ll find more than 160 wines by the glass in Hostile Grape, offered up by one of the largest Enomatic® wine dispensing installations in the United States. Several of these wines (six different labels in fact) come from grapes produced at the Marnell family vineyard located in California. We not only serve this wine in our bars and restaurants, but also gave 250,000 bottles of it away to our iMagine Rewards members last year.

Social Dining at M Resort

Sláinte – To your health this St. Patrick’s Day

You may be interested to know that there are some 36.5 million U.S. residents with Irish roots – a number nine times the population of the “Emerald Isle” itself. On March 17 every year, however, we’re fairly certain the number of claimants to this heritage must skyrocket into the hundreds of millions here in the states. And why not? St. Patrick’s Day is a holiday that got its start here, as Irish patriotism grew in the late 18th century along with the population of Irish immigrants arriving here. Since 1820, some 4.8 million immigrants from Ireland have been admitted to the United States. With the proud, interesting and extensive culture and history the Irish brought with them, it’s no surprise St. Patrick’s Day celebrations not only came into being here, but also flourished. 

“Patty’s” as it’s often referred to as in Ireland, is celebrated by people of all backgrounds and nationalities, but generally StPatsblogthe largest number of celebrants and events can be found in the United States, Canada and Australia. And though these countries lay claim to the largest celebrations, St. Patrick’s Day is celebrated in many other areas around the world including Asia, Africa and South America. In Ireland itself, St. Patrick’s Day has traditionally been a religious occasion. Recently, however, the Irish government began a national campaign to use the “holiday” as a way to drive tourism. 

Across the country tomorrow (and around the world for that matter), celebrations will be held in streets, pubs, residences and just about anywhere else you can think of. Here in Vegas, you’ll find no shortage of St. Patrick’s Day festivities in which to partake. Many of you attended, and many more of you may have seen or heard about our “As Single As I Wanna Be” party for this past Valentine’s Day at M Resort. It was held down in our wine bar, Hostile Grape, which has one of the coolest, sexiest atmospheres of any venue in Las Vegas. We decided to give ladies who

What is my job as Executive Director of Sales for the M Resort? Part of it is to ask meeting planners around the country the above question – why not come to the M Resort for your meeting

Through my discussions and travels to the numerous meetings tradeshows and conventions throughout the year I receive many answers from planners on why they don’t know, don’t want to, or can’t book their meeting at our resort (of course I also hear the – “I can’t wait to have my meeting at your resort!” from planners too –but that’s too easy to talk about). 

When I’m out and about or talking to planners my job is to turn those don’t knows, don’t want tos, and can’ts into solid bookings for the resort. So what do I tell planners about the M Resort? It depends on their specific needs and what business objectives they want to accomplish, but generally, I tell them, at the M Resort we take a different approach to meetings. We don’t have millions of square feet of meeting space – we weren’t designed to be a massive exposition hotel – but the space we do have is boutique in nature, accommodating the most discriminating of meeting planners. It’s boutique because we want you to feel at home.

Veloce Cibo – More than a room with a view

M Resort does indeed have “a room with a view” and it’s called Veloce Cibo. Perched atop the tower, spanning the entire length of the 16th floor, Veloce’s view is not only spectacular, it’s unique. Take a look up and down the Las Vegas Strip and you’ll find property after property staring East or West across the famous boulevard at one of its neighboring competitors, the glare of their marquees proudly invading each other’s hotel rooms. Not here at M – here we’re nestled some 400 feet above the Strip; take an elevator to the significant heights of Veloce and you’re offered a commanding South to North view, those marquees now a twinkling delight for your dining experience.

It’s not just the view that’s going to entice you however. Veloce combines an extensive menu of appetizers, entrees, sushi, sashimi and nigiri, as well as satisfying desserts, and pairs them with a range of hand-crafted cocktails and specialty drinks at Bar Veloce. Maybe the Chilled Oysters to start, then the Grilled Porterhouse with Tuscan Herbs, garlic and artichokes paired with the Yukon Gold Mash? Finish with something sweet, the Bobolini or Coconut Lollipops. Been to Hostile Grape? Tried the Enomatic wine dispensers? You’ll find more in Veloce and your wine card works here too. 

But there’s even more to Veloce than the view and the great food. The space itself is something to take notice of. Veloce Cibo translates roughly to “velocity of food.” You’ll find dark woods accented with polished metals, reminiscent of those classic wooden motor boats from makers like Chris Craft, Lyman’s and Century – speed, beauty and class personified. The large terracotta louvers offer a taste of something traditional with a dash of something contemporary.

Veloce offers a terrace and bar at one end, which flows into another room with a sushi bar, into another dining room with private booths and open tables, the next room with another bar and on. Your surroundings are such an integral part of the dining experience – Veloce offers choice and variety, though each environment is complimented with that view and yes please, that food.
