Big Bang Foods

With the 4th of Julyduckrollsblog holiday just around the corner, we’re doing “Big Bang Foods” this week on Martini Time with Chef Tina Martini here at M Resort. And since the weather in Vegas is so hot this time of year, we thought it might be nice to give you a recipe that gives you that great grilled flavor without ever having to turn the grill on. It’s also a diversion from the “regular” picnic fare and is sure to impress the family and guests: 

Barbecue Duck Spring Rolls

Ingredients:

Chow-Chow

  • 1 head green cabbage, shredded
  • ½ cup diced sweet onion
  • ½ cup chopped green or red bell peppers
  • 2 tbsp salt
  • 2 cups apple cider vinegar
  • 1 ½ cups sugar
  • 2 tsp dry mustard
  • 2 tsp celery seeds
  • 2 tsp mustard seeds
  • 1 tsp ground turmeric
  • ½ tsp ground ginger

 Spring Rolls

  • 6 duck legs confit
  • 1 carrot, grated
  • 1 red onion, grated
  • Barbecue sauce to taste, plus more for garnish
  • Salt and freshly ground pepper to taste
  • 8 spring roll wrappers
  • 1 large egg
  • Vegetable oil for frying

 Directions:

Chow-Chow

In a large bowl, toss together the cabbage, onion, peppers, and salt. Cover and refrigerate for 4 to 6 hours. The vegetables will release some of their liquid. Drain well in a colander. 

In a large non-reactive saucepan, combine the remaining Chow-Chow ingredients and bring to a simmer over medium heat. Add the cabbage mixture and simmer for 5 minutes. Set aside. 

Spring Rolls

Pull the meat from the duck legs and shred it coarsely in a large bowl. Toss with the carrot, onion, and just enough barbecue sauce to coat the ingredients. Season the filling with salt and pepper to taste. 

Soak the spring roll wrappers in warm water for about 2 minutes, until pliable. In a small bowl, beat the egg. Lay the wrappers flat on a work surface and brush all over with the egg. Arrange a row of the duck filling (about the size and shape of a cigar) down the center of each wrapper. Fold the edges of each wrapper over the ends of the row of filling and then roll up tightly to enclose the filling. 

In a large, heavy pot, heat 2 to 3 inches of oil to 350°. Fry the spring rolls in batches, being careful not to crowd the pot, for 2 to 3 minutes, until golden brown on all sides. Remove to paper towels to drain. 

Divide the chow-chow among 8 serving plates. Cut each spring roll in half on the diagonal and set 2 halves on the chow-chow on each plate. Drizzle barbecue sauce around the chow-chow and serve immediately. 

peachbelliniblogWe’re also doing a frozen soufflé and a bubbly peach Bellini this week which are both light and refreshing for summer. If you are grilling this holiday weekend, here are a few tips you may enjoy: 

  • Grilling meat and fish on a bed of sliced fruit is different and creates moisture as well as flavor.
  • Take the chill off the meat or fish to ensure even cooking before placing on the hot grill.
  • Peel a whole pineapple and put it on your rotisserie spit. Melt butter and brown sugar in a small saucepan and brush the pineapple with the mixture as it turns. The pineapple is done when it is soft and caramelized.
  • Use cinnamon sticks or rosemary stems (remove the leaves) as kabob skewers and grill for added flavor.

Easter baskets? How about Easter cocktails!?

Spring has sprung here in Las Vegas and Easter is just around the corner. And while many of you will be dyeing and hiding eggs about the house, stuffing baskets full off chocolate goodies and let’s face it, that somewhat annoying faux grass that seems to get absolutely everywhere and cling to everything, we thought we’d offer you something a little more Vegas: Easter cocktails. So if you’re celebrating with family and friends at a little Easter get together or springtime party, here are a few ideas for fun and delicious drinks of the season:

1 oz. Godiva Chocolate Liquor
1 oz. Kahlua Mocha
2 oz. Half and Half
Shake all ingredients with ice in a cocktail shaker and strain into a martini glass with a chocolate swirl in the glass. Top up with chocolate shavings. 

Jelly Bean
.75 oz. Sambuca
.75 oz. Southern Comfort
.50 oz. Grenadine
Shake all ingredients with ice in a cocktail shaker and pour into a bucket glass. Top with 3 jelly beans. 

The Easter Basket
1 oz. Three Olives Chocolate Vodka
.50 oz. White Crème de Cacao
.50 oz. Cherry Brandy
Splash of Sprite
Shake all ingredients in a cocktail shaker and pour into a bucket glass. Pour a dash of Green Crème de Menthe down the side of the glass and let settle on the bottom. Float a small marshmallow Easter Bunny.

Chef Tina is giving guests quick tips and hints for Easter basket-carving with fruit and bread and demonstrating how to temper sugar for eye-popping sugar displays. Don’t forget that right after the show get to enjoy reserved seating inside the buffet. Times for the Easter-themed shows are 12 p.m. and 4 p.m. Wednesday, March 31 – Saturday, April 3. Sláinte – To your health this St. Patrick’s Day

You may be interested to know that there are some 36.5 million U.S. residents with Irish roots – a number nine times the population of the “Emerald Isle” itself. On March 17 every year, however, we’re fairly certain the number of claimants to this heritage must skyrocket into the hundreds of millions here in the states. And why not? St. Patrick’s Day is a holiday that got its start here, as Irish patriotism grew in the late 18th century along with the population of Irish immigrants arriving here. Since 1820, some 4.8 million immigrants from Ireland have been admitted to the United States. With the proud, interesting and extensive culture and history the Irish brought with them, it’s no surprise St. Patrick’s Day celebrations not only came into being here, but also flourished. 

“Patty’s” as it’s often referred to as in Ireland, is celebrated by people of all backgrounds and nationalities, but generally StPatsblogthe largest number of celebrants and events can be found in the United States, Canada and Australia. And though these countries lay claim to the largest celebrations, St. Patrick’s Day is celebrated in many other areas around the world including Asia, Africa and South America. In Ireland itself, St. Patrick’s Day has traditionally been a religious occasion. Recently, however, the Irish government began a national campaign to use the “holiday” as a way to drive tourism. 

Across the country tomorrow (and around the world for that matter), celebrations will be held in streets, pubs, residences and just about anywhere else you can think of. Here in Vegas, you’ll find no shortage of St. Patrick’s Day festivities in which to partake. Celebrate with Cocktail Cheer

With Thanksgiving just mere days away, we thought we’d take a look at some of our tasting concoctions available on the big day. We have more than 100 hand-crafted cocktails that are unique our resort and that were created by our resident mixologist and beverage manager Charlie Moavero. Charlie is always experimenting and coming up with unique beverages.

Charlie created some delicious cocktails especially for this Thursday. The Pumpkin Spice is our seasonal favorite. Pumpkin just makes us think of the holidays, harvest and family gatherings. Our Pumpkin Spice Cocktail is  light on the pumpkin (but still delicious!) and topped with cream and cinnamon.

 You can make this liquid delight too.

  •   3 oz. Pumpkin infused Vanilla Vodka
  •   .75 oz. Butterscotch Schnapps
  •   . 25 oz. Cinnamon Schnapps
  •   .25 oz. White Crème de Cacao
  •   .25 oz Half and Half

Shake all ingredients with ice until well blended. Strain into a chilled cocktail glass with a   graham cracker rim. Top with a layer of Amaretto whipped cream and cinnamon.

Some other yummy selections available on Thanksgiving include Cranberry Margarita and Nutty Caramel Apple Pie. If you don’t feel like being a mixologist at home, come to Veloce, Terzetto, Marinelli’s, Red Cup or Lobby Bar on Thanksgiving for a little liquid holiday cheer.

Don’t forget, we also have Thanksgiving menus in all our restaurants that will have you giving thanks to our chefs. First Look at the Nation’s Tallest Christmas Tree

We know, we know, Thanksgiving hasn’t even happened and here we are posting about our December holiday happenings, but we are truly so excited to share our BIG news that we just couldn’t help it. This year, we’re celebrating big, really big. So big that we’re the home of the Nation’s Tallest Christmas Tree!  Here’s a first look at our tree – it’s the beautiful one in the center of our photo!

One of the common questions we’ve been getting is – is it really the tallest? YES! We’re taller than Rockefeller (76 ft Norway Spruce) and we’re taller than the Capitol Christmas Tree (85 ft Blue Spruce). We’re even taller than South Coast Plaza’s tree (96-ft White Fir). South Coast Plaza is in Costa Mesa, California for those wondering.

Our beautiful White Fir will stand proudly at 109 ft.

Our tree will make the approximately 900-mile trip here to be placed in our piazza for the entire city of Las Vegas (and nation) to see. Our outdoor piazza was so well-designed that even a hole for the tree was pre-dug during construction. That’s advanced planning at its finest.

We hope the tree will bring visitors to our great city and also spread a little holiday cheer throughout our community and the nation.

We’ll be sure to post photos of the tree’s arrival, decorating and of course the lighting. We’re also creating a special tree commercial that we’ll post as soon as it’s finished – we might even show some previews.

Mark your calendars now – the Tree Lighting Ceremony will be Saturday, December 12 at 5 pm. We’ve got much more in store for the month of December and we’ll be spreading holiday cheer right here every Tuesday.
