<p>Las Vegas may be far from the ocean, but we&#39;re able to give our guests fresh seafood in the desert (which may seem impossible) thanks to Honolulu Fish Co. (HFC). The Hawaii-based fishery ships seafood fresh from the ocean to our <a href="http://www.themresort.com/blog/2012/02/ordering-up-for-m/" target="_blank">loading dock</a> in 18 hours or less on a daily basis. <a href="http://www.themresort.com/dining/dining.html" target="_blank">Our chefs</a> are able to keep guests&#39; seafood cravings satisfied and serve up the freshest, highest quality fish every day thanks to HFC&#39;s fish shipments.</p>
<p>The 18-hour process begins with fishermen catching the fish. HFC then processes the fish using the Japanese &quot;iki&quot; method, which is the industry standard for producing sashimi-quality meat. The fish are ice killed and bled immediately (while the heart is still beating). They are promptly chilled down to near freezing temperature levels. The boats even lay carpet on their decks so the fish can be processed on a soft surface. This process is necessary to produce the highest quality meat for the raw fish market.</p>
<p>HFC puts the fish they ship through strict quality standards. All of their fish are caught using sustainable fishing methods; they do not use nets, traps or trawls in the process. The seafood must be &quot;iki&quot; processed and their fish meat must have high translucency, low water content, high oil content and PH.</p>

<p>After the &quot;iki&quot; processing method, the fish are packaged in thermo dynamic heat shielded boxes. The meat is vacuum sealed and then packed with custom gel ice and specially developed absorption pads that help to prevent excess moisture. They are immediately shipped via Fed Ex Air to the <a href="http://www.themresort.com" target="_blank">M Resort</a>. Once the shipment arrives at our loading dock, it is sorted and sent up to our different restaurants to be prepared by our amazing chefs!</p>
<p>If you&#39;re dining on Sashimi Tuna, Mahi Mahi, Ora Salmon, Ono, Swordfish, Snapper or Grouper at any of our restaurants, you&#39;re enjoying fish that came straight from Hawaii. Our Italian restaurant Marinelli&#39;s is introducing several new menu items including more pizza, pesce and pastas, our three favorite P words! Their new menu debuts today and it&#39;s filled with more casual options perfect for any budget.</p>

<p>We can never get enough pizza, this Italian-American staple is sure to please. The new variety on Marinelli&#39;s menu features unique options like the Pizza Carne. This pie perfect for meat-lovers has sopressata (an Italian cured dry salami), prosciutto, pepperoni, plum tomatoes and mozzarella. For a more traditional choice try the Bianca, this white pizza has mozzarella, mushrooms, arugula, prosciutto, shaved parmigiano-reggiano and (our personal favorite) truffle oil.</p>
<p><strong>Pesce</strong><a href="http://www.themresort-mvision.com/blog-uploads/MarinellisSalmon.jpg"><img class="size-full mr-image-4457 alignright" title="MarinellisSalmon" src="http://www.themresort-mvision.com/blog-uploads/MarinellisSalmon.jpg" alt="MarinellisSalmon" width="296" height="214" /></a></p>
<p>Pesce, which translates to fish, is a staple in Italian cooking. Marinelli&#39;s offers an assortment of four different fish including Alaskan Halibut, Pacific Salmon, Chilean Seabass and Pacific Snapper. Each fish dish can be ordered grilled or pan seared and is accompanied with orzo pasta, fennel, olives, oven dried tomatoes, asparagus, EVOO and lemon.</p>
<p><strong>Pasta</strong></p>
<p>There&#39;s nothing like a classic pasta dish, especially with fresh, homemade noodles. <strong><a href="http://www.themresort-mvision.com/blog-uploads/MarinellisRigatoni.jpg"><img class="alignright size-full mr-image-4456" title="MarinellisRigatoni" src="http://www.themresort-mvision.com/blog-uploads/MarinellisRigatoni.jpg" alt="MarinellisRigatoni" width="296" height="189" /></a></strong>Marinelli&#39;s menu features many traditional dishes and all of their pasta noodles are made fresh in our own kitchens. You won&#39;t want to miss their Fettuccini Carbonara, which has bacon, egg, parmigiano-reggiano, cream and sweet peas. The Capellini with shrimp, garlic, fresh tomato and white wine is a great option as well.</p>
<p>These and many more dishes are on Marinelli&#39;s menu. There are even new dessert selections as well as a vegetarian section on the menu.</p>
<p>The Marinelli&#39;s atmosphere still features intimate booths and tables with views of our outdoor pool piazza. During the warmer months, al fresco dining is available on Marinelli&#39;s terrace. The restaurant also has a 20-seat private dining room that overlooks the piazza, which is perfect for celebrations. Stop in and sample some of their new Italian fare daily from 4pm-10pm.</p>
