<p>Champagne &#45; Traditionally, all alcohol was considered an aphrodisiac due to its tendency to lower the drinker&#39;s inhibitions and lift one&#39;s spirits.  The scents of certain wines and champagnes are thought to imitate human pheromones.  Start your meal off with a glass of bubbly and you&#39;ll be on the right track.</p>

<p>We caught up with Sam Bennett, our wine guru and sommelier at <a title="Hostile Grape" href="http://www.themresort.com/dining/hostilegrape.html" target="_blank">Hostile Grape</a> and had him share some of his summer wine selections with us.</p>
<p>&#8220;In the summer I always enjoy white still wines and especially sparkling wines.  There is something very refreshing about Sauvignon Blanc, Riesling and champagne when the temperature heats up,&quot; said Bennett.</p>
<p>Honig Sauvignon Blanc from Napa Valley has always been one of his favorites for the warmer seasons.</p>
<p>&quot;The gooseberry, melon and touch of grapefruit with crisp acidity is really refreshing.  Monchhof &#39;Mosel Slate&#39; Riesling-Spatlese from Germany is lower in alcohol than most still white wines and has a nice touch of sweetness.  The aromas or fuzzy peaches and other stone fruits present in this Riesling also make it a huge crowd pleaser.&quot;</p>
<p>Although wines are not to be missed during the summer months, champagne always holds a special place for Bennett.</p>
<p>&quot;Its effervescence (that&#8217;s bubbles if you don&#8217;t have a wine dictionary neary you!) and refreshing qualities make it perfect for pool time as well as patio time.  Yeasty, bready, Brut Champagne is my favorite in the summertime.&quot;</p>
<p>For unique summer wines Bennett recommends &#39;Brachetto D&#39;Acqui,&#39; Banfi, &quot;Rosa Regale.&quot;</p>
<p>&quot;It is a sparkling wine that is a little closer to red wine than a rose that comes from the Piedmont region of Italy.  It has a slight touch of sweetness and is really great when served chilled.&quot;</p>
